If you're anything like me and are constantly hungry/on the verge of hangry, this filling quinoa bowl will definitely put in you in a better mood. I like to make these for lunch because they aren't super heavy and don't land me in a comatose state around 2pm, but they have just enough grains and greens to keep me satisfied all afternoon.
This recipe takes about 15 minutes to make, serves 2 people (or one for now and one for later), and weighs in at only 450 calories.
You'll Need:
- Quinoa - 1 Cup uncooked
- Kale - 1 1/2 Cup
- Spinach - 1 1/2 Cup
- Large Tomato
- Avocado
- Lemon
- Garlic Paste - 1 tsp (or 1 clove, peeled and minced)
- Extra Virgin Olive Oil
STEP 1
Rinse the Quinoa thoroughly in a mesh strainer over the sink. Add the quinoa to a small pot with 2 cups of water and bring to a rapid boil. Once boiling, reduce heat and cover, allowing the quinoa to simmer for about 15 minutes, or until all the water has cooked off and the quinoa is light and fluffy.
STEP 2
While the quinoa is simmering, wash and dry the produce. Medium dice the tomato. Quarter and deseed the lemon. Pit, remove the skin, and thinly slice the avocado. Squeeze one quarter of the lemon over the avocado to prevent it from browning. Small chop the kale.
STEP 3
While the quinoa continues to simmer, make the dressing. In a small bowl, add the juice of the remaining 3 lemon quarters. Whisk in 1 tsp garlic paste and 2 tbsp olive oil. Add salt and pepper to taste.
STEP 4
When the quinoa is fully cooked, fluff with a fork and divide between 2 bowls. Working in layers, divide the remaining produce - kale, spinach, tomato and avocado - between the bowls. Pour half of the dressing over each bowl and sprinkle with salt and pepper. Enjoy!
