I have been making this incredibly easy recipe for Chia Pudding forever now and it's the best breakfast. Especially if you're on the go and just need something easy, healthy, and filling. You can make the pudding the night before in a mason jar or glass tupperware and then grab it from the fridge in the morning, throw some fruit and honey on top and you're good to go!
You’ll Need:
- Chia Seeds - 1/3 Cup
- Vanilla Almond Milk - 1 1/3 Cup
- Clover Honey - 2 Tablespoons
- Strawberries - 1 cup sliced
- 1 Banana - 1/2 inch slices
This recipe makes 2 servings.
STEP 1
Add Chia Seeds, Milk, and Honey to your jar or container (I doubled my recipe and made 2 jars worth, 4 servings, so I can continue to eat it throughout the week). Put the lid on tightly and give it a good shake for about 30 seconds. The chia will start to settle to the bottom but no worries, as they expand overnight they will evenly disperse in the milk to make a consistent, creamy pudding.
STEP 2
The next morning, or a few hours later when the chia seeds have set, divide the pudding between two bowls and top with your favorite fruit and honey! I added strawberries and bananas to ours here, but other awesome combos are nectarines and pears, blackberries and mangos, or if you have a sweet tooth, raspberries and dark chocolate nibs will do the trick!
And that's honestly it! In total, this recipe takes no more than 5 minutes to make and is about 230 calories per serving with fruit (sans fruit it's only 160 cals). See? Healthy, easy and so good. Enjoy!
